My name is Lisa and this blog is my journey on a healthy, plant-based, real food, vegetarian diet.  All of the recipes I post on this blog are meatless, and many are vegan, although if you eat meat it can easily be added to the recipes. 

I do not follow a strict vegan diet (I occasionally eat cheese and yogurt), but I feel my best when I stick to a plant-based diet, and most meals I eat are vegan.  One of my goals of blogging is to show you that a vegetarian diet is not boring in the least and can make you look and feel great!

I also do not follow a strict gluten-free diet but you will notice that many of the recipes I post are gluten-free for 3 reasons:

1) my husband is sensitive to gluten

2) I try to eat whole foods and often wheat containing foods are highly processed

3) I find it easier to digest gluten-free whole grains like rice, quinoa, millet, and corn


Why eat a healthy diet?

 

I believe that living a healthy lifestyle and eating a healthy diet is one of the most important things you can do for yourself and to role model for your family.  My mission every day is to serve my family healthy, real foods that taste great because frankly I am sick and tired of all the processed crap that is available EVERYWHERE.

Surprisingly, I really don’t like to cook or follow recipes so most of my recipes are easy to follow with little prep involved.

 

Thoughts about food and eating…

 

I believe that a plant-based diet, that includes real and whole foods, is vital for optimal health and well-being.  Real foods being things that were once living or derived from something that was once living — fruits, vegetables, whole-grains, beans, nuts, and seeds. 

 

I believe that it is wise to eat organic as often as possible.  By choosing organic foods, you’ll reduce your exposure to artificial ingredients, pesticides, hormones, hydrogenated oils, processed sugars, chemical additives, and genetically modified ingredients.

The meat that I buy for my family is organic and from free-range, grass-fed animals; eggs are from cage-free hens; and I stick with organic dairy products. 

On blogging

I try to keep a healthy balance between writing/blogging and the other things that need my attention — changing diapers, helping with homework, reading to my kids, bath-time, baseball practice, doctors appointments, grocery shopping, paying bills, and cleaning.  Notice that manicures and pedicures are no longer on this list… that’s what happens after 3 kids.

I am a registered dietitian, writer, blogger, health foodie, wife (to my high school sweetheart) and mom of three.  I have a Master’s Degree in Nutrition from California State University, Northridge.

How my mission to eat healthy started…

In high school I didn’t pay much attention to how I ate because I was very active in sports and running so it really didn’t cross my mind.  I ate pretty much whatever I felt like.

In college my unhealthy eating habits caught up with me.  Yes, eating hot chocolate mix straight out of the can was probably not such a great idea.  Anyway, I quickly gained the freshman 15 + and my running coach made it very clear to me that my times were slowing as a result of the added weight.

I struggled for a while with unhealthy eating patterns, you might be familiar with them…  restrict, binge, restrict, binge… and all the ugly things that go with that cycle –> negative thinking, anxiety, etc.

That’s when I started studying nutrition and I became hooked.  I didn’t stop until I got my Master’s degree in nutrition in 2003.  That same year I also married my high school sweetheart, we bought our first home, and I became a Registered Dietitian.  Professionally I have had an article published in the Journal of the American Dietetic Association (a review of conjugated linoleic acid), I’ve worked as a clinical dietitian, renal dietitian, freelance writer, and in private practice.

Now I am a stay-at-home mom of 3 precious children that I love dearly and would do anything for.

I work daily on accepting ME the way I am, replacing negative thoughts with positive thoughts, and staying mindful/present in everything that I do. 

I tend to worry about things of the past/future so I try to remember that worrying accomplishes nothing.

“Therefore do not worry about tomorrow, for tomorrow will worry about itself. Each day has enough trouble of its own.” – Matthew 6:34

 

I love most anything that has to do with the outdoors — taking walks, hiking, jogging, and camping.  Read about our latest camping trip here.

  6. Nice to meet a fellow RD mom! I too have the same problem if worrying too much about the past and the future and have to be mindful of living in today! How do you keep positive? Any books you read?

    • I’ve been dying to read a good book but seriously lack the time!! I stay positive by nourishing my body with positive thoughts and healthy food ;-D When I start to worry or get anxious I quickly attack the negative thoughts with positive thoughts. I also find that I am much more at peace and positive when I am strong in my faith!

    The best thing I have found to stop worrying is the work by Byron Katie. Her book “Loving What Is” has changed my life. We can all try to stop worrying, but at 3 in the morning, it all comes in at me. With Katy’s work, I simply stop believing my worrying thoughts, and then they are gone.

    My husband and I are cleaning up our diets. We’ve always loved veggies and whole foods, but live in an area where they aren’t always readily available, but we’re dropping that excuse and doing what we can. Your blog is inspiring and offers some great recipes and tips. Thanks for sharing!
