Pizza Impossible Pie (gluten-free)

the recipe for the pizza impossible pie (from WIAW)!

Veggie Impossible Pie

(gluten-free *with gf oat flour)

2 cups bell mixture of peppers & onions, fresh or frozen (cook the vegetables first, or the pie will be soggy)
1/2 cup olives, sliced

1/4 cup pizza sauce
1 cup unsweetened almond milk
2 eggs
1/4 cup shredded cheese

1/2 cup oat flour
1/2 cup millet flour
1 tsp. baking powder
1/4 tsp. sea salt (didn’t have baking soda so tried my luck w/ salt)
pepper

1/2 cup pizza sauce (for topping)
shredded mozzarella cheese (for topping)

Preheat oven to 350 degrees F.  Grease 9 inch pie plate with coconut oil.

Sautee the peppers, onions, and olives in a small amount of coconut oil.

Place cooked vegetables in pie plate.

In a medium bowl whisk together the millet flour, oat flour, baking powder, salt and pepper.

In a separate bowl mix together the wet ingredients: pizza sauce, almond milk, eggs + 1/4 cup shredded cheese

Mix the wet ingredients with the dry ingredients.

Pour mixture over cooked vegetables.

Bake for 30 minutes at 350 degrees or until golden brown.

Spread pizza sauce over the top of the baked impossible pie (I only used 1/4 cup and it wasn’t enough so I increased it to 1/2 cup in the recipe).

Cover with shredded mozzarella cheese.

Place under broiler until cheese is golden brown.

Love this recipe and so does the rest of the family — a win-win dinner!

Last week someone asked how many calories are in the no cook coconut chia krispy bars

After entering all the ingredients into an online recipe calorie counter this was the result:

Calories for the total recipe = 809

Calories per bar (6 bars per recipe) = 135

Love to you all this morning!  You may have noticed that I’m posting less often (maybe not, lol).  Anyhow, I started a little part-time job, which has taken up most of my free (blogging) time.  But I’m doing my best to keep chugging along and posting 1 to 2 times each week.  Not cause I have to, but because healthy living is my passion and I love talking food/nutrition .

    I really want to try this! However, I’m just one college girl and, while I love leftovers, I was wondering how many servings you typically get out of this (or an est. of calories per serving)? I have a pretty big appetite (especially after a long day) but I’d rather not overdo it ;) Thanks for another great recipe!

    • Haven’t done a calorie count but I you could cut the recipe in half and use a smaller pie plate or a small baking dish. I used a 9 inch pie plate so try to find a dish that is half that size. If you have leftovers stick them in the freezer… that way they’re harder to get to ;) Let me know if halving the recipe works!!

  3. ohhhh man! This looks amazing!! I’ve never seen pizza prepared like this (a broiler?!) but I love it. Who needs Chicago deep-dish pizza when you can make this?? ha! thanks for the great recipe (And I’m assuming you used the millet flour to add more protein to the crust, for structural reasons?).

  7. That pizza pie looks amazing! I love when the cheese get a little brown on the top. And those bars! I’m glad you posted the calories for the whole thing… because I may be tempted to eat them all. ;)

  8. Love the pizza pie. I usually end up using frozen crusts (Udis) for my pizza because I haven’t had much luck with making GF crust, but I love how you pour this over the veggies. It’s definitely going on my Pinterest board for my weekly menu inspiration! New job?? Congrats! Yes, what will you be doing?

  18. Oh my word, this looks incredible. I recently went dairy-free and wasn’t really missing cheese in the least, but this may just have changed my mind on that. I think I need to try this with some Daiya non-dairy cheese, ASAP. Thanks for sharing.
