What I Ate Wednesday: Superbowl Sunday

Hello there!

Glad you loved my buns last Friday… actually they’re Lou’s buns, so I can’t take the credit… genius recipe =)

Today is What I Ate Wednesday — what better day to showcase my eats from Superbowl Sunday!

 Sunday morning I scarfed down my last bun topped with maple syrup and sprinkled with coconut flour…

Lunch was this baked potato with roasted corn

We got an early start to our Superbowl food preparations…

Veggies Galore!!

 

Veggie tray with hummus dip

Sweet & Spicy yogurt chipotle dip

 

This was an experiment dip… it turned out great but it was a little too spicy for my likings.  Next time I’ll start with less chipotle and increased to taste.

Sweet & Spicy Chipotle Yogurt Dip

2 oz. canned chipotle peppers, blended (start with less and increase to desired spicyness)
2 cups Greek yogurt, 0% plain
juice from 1/4 lime
1 tbsp. cilantro, chopped
1 tbsp. honey

Of course wine was involved…

Pizza Impossible Pie

Outside play between quarters…

What more do you need than fresh vegetables, yummy dip, pizza (healthified), and wine?!!

    Pretty veggie tray. In a nod to tradition (wink wink) we had sushi for superbowl.

    That pizza pie looks like the most delicious thing ever!! Way to have some healthy options for the big game too, nothin beats the convenience and deliciousness of a veggie tray :)

  4. Oh that pizza has my name written all over it! I’m missing fresh corn like that. What a great combo over the potato. I used to always mix my smashed potatoes and corn together as a kid.

    Second, I totally want to come to a super bowl party, or any party, at your house. Haha :) I could eat everything in site and not feel badly about it :)

  9. Looks like a delicious spread, and wasn’t it a gorgeous day in So Cal? I spent 3 hours working in my yard before the bog game, so got in a pretty good workout :-) . My friendS and parents came over to watch the game-lots of yummy food, but the stand out was my Dad’s yummy bruschetta which I enjoyed to next day too over scrambled eggs. Hope to post the recipe soon!

  12. I’ve and a chipotle yogurt dip just like that and loved it! I only added 1-2 peppers since I don’t like things too spicy. Wish I ate by you for the Super Bowl! Everything looked great :-)

    Mmm, that veggie tray looks so good! Can’t go wrong with hummus and veggies as a healthy option that’s still fun to snack on.

    Everything looks great! I definitely think the healthy stuff looks way better than the traditional junk foods.
    I made spinach artichoke dip over the weekend for girls night (which is as close to super bowl food as I can come, because we didn’t do anything and I ate the leftover dip!).
    I wish our weather was like yours—we definitely couldn’t have played outside between quarters!

    The football portion of the superbowl is so not my favorite part lol, the food and company is the best!
