Apple Cinnamon Buns (Gluten-free + Vegan)

I can’t tell you how many amazing recipes I see on blogs — that I intend on making, but never get around to it.

But every once in a while I see a recipe that I absolutely have to make…

like Lou’s Cinnamon Buns

Before I share more pictures of these amazing buns I have some exciting news!

No I’m not pregnant =)

Thursday I found out that my lemon chia seed cake was featured on Shape.com ((excited about that))

Now back to the buns… I love everything about them: simple ingredient list, vegan, sweetened naturally, and (best of all) I had all the ingredients in stock to make them immediately.

Cinnamon ‘Buns’

(vegan, gluten-free, and naturally sweetened)

I made just a couple of tweaks to her recipe:

I reduced the dry ingredients since the apples I used were small, and I used oat flour instead of oats. 

Here are my tweaks:
5 T oat flour
3 T coconut flour
1/4 t sea salt

The best way to make the buns is with a food processor, but since I am without one for the time being I used my Vitamix to finely chop the apples.  In a separate bowl I mixed the dry ingredients.  Then I combined the chopped (semi-puree) apples with the dry ingredients and formed the dough into little buns.

The first time I made this recipe I used whole oats and I made the mistake of putting the all the ingredients together in the vitamix… that’s why you see chunks of oats in my buns (pictured below).  If I use whole oats again I will grind them up first in the vitamix and then add the apples.

Either way (whole oats or oat flour), the flavor blows my mind.  Personally I love using the oat flour because you get that smooth doughy texture.
