Last week was filled with lemon chia cake so it felt good to get back to more of a normal day of eating.
By the way thank you for all your feedback about the cake.
Laura made the cake into muffins using brown rice flour in the place of the millet and said the results were incredible! Lindsay said she used spelt flour in place of the millet flour for the 2 minute lemon chia cake and it worked beautifully. Lastly, Karina made the 2 minute sweet potato cake using pumpkin in place of the sweet potato and a combination of peanut + whole wheat flours in place of the coconut/millet flours — she also called her results incredible!

Breakfast started with 2 cups of coffee and so I was rather pleased after reading the latest on the benefits of drinking coffee.
If you haven’t heard, studies show that coffee drinkers have a reduced risk for getting type 2 diabetes. According to this article, people who drink 4 + cups of coffee daily have a 50% lower risk of the disease. It goes on to say that for each cup of coffee beyond 4 cups brings another decrease in risk of almost 7%.
While I would love to drink 4 cups of caffeinated coffee a day I’m not sure that my body would be okay with that… let’s just say I get the shakes when I’m on caffeine overload. I wonder if the benefits extend to decaf coffee? I usually drink a mix of half decaf/half regular coffee in the morning.
Back to breakfast… I ate half of a baked acorn squash…
…topped with peanut flour + cinnamon + maple syrup.
Snack
Greek yogurt + coconut flour + almonds.
Lunch
Salad with baked cauliflower + shredded carrots + hummus + cranberry dressing.
Other snacks not pictured = almonds, granola bar
Dinner
Tacos with grilled Portobello mushrooms + peppers + avocado + homemade pico-de-gallo.
And this cabbage salad with brown rice + corn + homemade pico-de-gallo + cilantro dressing.
The cabbage salad was put together rather quickly using the ingredients set out for the tacos. It wasn’t a planned part of the dinner but I was really happy with how it turned out — definitely will make it again!

Love a pro coffee study too and can’t stand the coffee haters (we know it’s acidic but it’s soooo good). Cabbage, I have to do more I use for tacos but also saw an Ina recipe I want to try. Hmn.

Never think of having squash for breakfast…that said roasted squash (butternut is my favourite) is simple irresistable! It usually doens’t last too long once taken from the oven!

Those tacos look fantastic. I have a mushroom loving house so I will have to spring these on them sometime.
I heard about the coffee report, but I wondered how many people would read that and then think it was okay to douse the coffee with creamer, sugar, and other additives and still be ok.
I think 4 cups tends to be A LOT of coffee.

mm i love the tacos. whenever i have guests over, its my favorite thing to make for ppl b/c it can suit any type of eater, even healthy vegan GF people like me! and i eat cabbage for dinner every night! except i cook mine on the stove. oh yea, and raw sauerkraut. i think cabbage is awesome!

i’d totally eat squash for breakfast, i eat sweet potato all the time. And i’ve been switching to chai tea and decaf coffee. I love the hot cup in my hands. I wish i could drink 4 cups of coffee, but then sleep would not exist, yes? haha.

Oh, and the food looks wonderful! I’ll have to try the peanut flour on my squash next time! Thanks for the great ideas. I’m a throw together cook, and it’s amazing how the throw togethers are too similiar day after day. Thank heaven for winter food, and summer food!
I love that you mentioned POSITIVE benefits of caffeine– there is SO much negative info out there about it nowadays that people make me feel nothing but guilt when I tell them that I haven’t booted the heavenly pick-me-up drink from my diet.

I too just heard that about coffee, and loved that because I am quite the coffee drinker. I have always heard mixed things about drinking coffee so I love when I hear healthy benefits of my habit!

That squash looked so amazing, I think I will have to give that a try sometime! All of your days dishes looked delicious! That’s what I love about WIAW, gives me so many great ideas for new recipes!

Those mushroom tacos are calling out my name right now! Oh, and I recently read an article about decaf being good for you too due tot he high level of caffeic acid I believe {which is different from caffeine}. I do the same thing as you-half regular/half decaf. I find that when I do pure caffeinated coffee I don’t sleep as well at night.
