This past week I’ve been on a cake feeding frenzy…
…that’s what happens when you’re trying to develop a recipe… you have to taste it to make sure it’s good right?!
At least it’s healthy cake!
That brings me to What I Ate Wednesday.

Breakfast on Tuesday was mmmm cake, lots of leftover cake from my attempts at trying to turn the 2 minute lemon chia cake into a normal sized cake.
And the cake was my morning snack too =)
Lunch was this coconut-ginger-garlic rice. I cooked basmati rice with minced garlic and ginger. Then I made a sauce out of coconut flour, garlic, ginger, salt and water. It was white sauce on white rice… a big culinary no-no but so good. Too bad you can’t see the sauce = camouflage.
About an hour later my body craved some veggies… hmmm wonder why… maybe it was all that cake!
Into the salad mix = hummus, spinach, carrots, sunflower seeds, lemon juice, and honey
Dinner
We rarely eat out but when we do you’ll usually find us at Sharky’s. If you haven’t been to a Sharky’s… dang you gotta come out to California just for something off the Naked Menu! So good! I usually order the Naked Veggie Bowl — comes with organic tofu, brown rice, black beans, zucchini, peppers, onions, and guacamole. I gave the low-fat sour cream to Michael… not a big fan of the stuff.
Sort of a crazy day of eats… snacks not pictured included almonds, Puffins, and greek yogurt. Hopefully after this cake making madness I’ll get back to normal eating!

wow i love finding healthy eating places. i would love that salad bowl! i also love basmati rice. is basmati considered to be white rice? i always wondered about it!

Brown basmati rice definitely will give you the maximum health benefits! White basmati rice is a more processed form of the rice… although it still ranks low-medium on the GI index whereas white rice ranks high on the GI index.

Bottom line… go with brown basmati if given the choice =)

As if I needed more reasons to want to go to California–that meal looks delicious! And I love the camouflage sauce, haha. Looks like a bowl of rice–but I’m sure it was tasty with those ingredients!

Sounds like a yummy day! I love eating hummus w/ my salads. Our friends own a Greek/Persian restaurant close to our house and they always give us a free serving of hummus when we go. Since I can’t eat the pita {probably a good thing!} I always save it to eat w/ my Greek salad. Delicious!

Great idea!! For the cake on Friday I’m using dates and bananas as natural sweeteners… perfect for kids!!
So I didn’t get around to using dates in the recipe but you can blend 5 dates with the banana and almond milk to use in place of the sugar/stevia… perfect for a little one =)
Tasty eats as usual..I luv the dressing on the salad..hummus…then some lemon and honey..I will have to try the lemon & honey together..sounds great! I have decided to cut back on baking/treats as I was tired of tasting//feeling full and sometimes with nothing to show except a full belly and a flop! You’ll get it though I am sure..still can’t wait to try the mini version! Have a great day!
