Kelly Slater, Rincon Point, 2 Minute Sweet Potato Cake, and A Blogiversary

My goodness that was a long title!

Remember I told you on my last post that we drove up to Rincon beach on Tuesday?

We arrived at Rincon around 4 PM, took the short hike from the parking lot to the beach…

…and set up our blanket so that we could watch the waves and the surfers.

The weather was perfect — just a gorgeous evening!

Just as the sun was setting Michael said “hey babe, I think that’s Kelly Slater.”

We weren’t sure at first if it was him so we just hung out for about another 30 minutes watching the surfers ride in.

Just as it was getting dark we saw who we thought was Kelly Slater again.  And I’m not exaggerating how dark it was… this is without using the flash…

We asked some guy standing near us if it was indeed who we thought it was and the man said YES.

Michael said “we can’t miss out on getting his picture with the boys, he’s one of the greatest athletes ever” … so we walked over and asked him — he smiled and said “sure.”

So thank you Kelly Slater for turning our already wonderful evening into an extraordinary experience!  The boys are still gawking over their picture with you!

On the blogging front, yesterday was the 1 year blogiversary of Healthful Sense…

I made myself this little cake…

2 Minute Sweet Potato Cake (Gluten-free + Vegan)

1 Tbsp. coconut flour
2 Tbsp. millet flour
1/4 tsp. baking powder
1/8 tsp. baking soda
1/4 tsp. cinnamon
1/4 tsp. vanilla
1/4 cup sweet potato
1 tsp. chia seeds
Liquid stevia (I used NuNaturals vanilla stevia, 7 drops)
3 Tbsp. rice milk
2 Tbsp. water

 I usually have cooked sweet potatoes in my fridge because I use them for so many of my recipes but if you don’t have any you can use applesauce, mashed banana, or dates instead.  Mix the dry ingredients together first.  Add the wet to the dry.  Microwave in a glass mug for 2 minutes and bam it’s done.

You guys will LOVE this single serving cake… I’m sure of it!!  So simple, so quick, so good!

Before I go I want to thank All of you that visit Healthful Sense, be it daily, weekly, monthly, whatever!  Yes, I blog because I love it, but it also makes me feel like I’m doing something worthwhile when I receive feedback and love from you.

Looking back at my first post makes me realize how much my blog has “grown up.”  When I published my first post I had no idea what I was doing, I just knew I had a passion for healthy living and wanted to share it with the world.

I still sometimes wonder where I’m going with Healthful Sense… my hope is that my journey will motivate and inspire people to continue their pursuit of health no matter what challenges stand in their way.  Life has thrown a few hard punches my way but I get up and keep moving forward.  I don’t let other people or situations keep me from living a healthy life to the fullest.  That is my hope for you!!

    I do not have a microwave ( horrid thing to have in your home )how long do I bake that sweet potato cake thingie you had in the cup ! It sounds divine :)

    • I would estimate about 10-15 minutes… I haven’t yet tried it out in the oven.
      I’m working on a similar cake this morning but larger… I’ll post the ingredients and cooking time next week! =)
