It’s still seems weird that 2011 is coming to an end and we’re approaching the first days of 2012. A whole new year ahead of us. Last night I hopped over to my google analytics account, which keeps track of website statistics. I have no idea what 90% of the data means but I do know how to check out my most popular posts in 2011.

Raw Cookie dough chia pudding (made with coconut flour)
Chia pudding with peanut butter mini crisps (the crisps are a basic mixture of dates, peanut butter and rice crisps)

I still haven’t gotten into the chia pudding b/c of texture, but I think the addition of crunch might work for me. Love the jam idea. Just saw a recipe for strawberry chia jam – I think it was in Oxygen mag. I have started putting chia seeds in my overnight oats. Love how creamy they make it. Happy New Year!
I too prefer the combo of oats + chia seeds. If I make chia pudding it has to have something crunchy in it like rice crisps or nuts.

I won’t disagree with these! I’ve used that basic chia pudding recipe a bunch of times, and I’m still in love with sweet potato “cookie dough” balls!
I haven’t made much with chia seeds, but I would really like to try that jam.
