Hi! Hope you all had a joyous Thanksgiving!
We spent the day cooking, laughing, playing, coloring, running in the leaves, playing football and baseball, and just enjoying each other…
In honor of the first Thanksgiving on Healthful Sense I wanted to give you a tasty (but healthy) recipe! The plan was to post this on Thanksgiving but I took my own advice and shut down the computer for the Thanksgiving break and just enjoyed my family!
So today I leave you with this beauty…
Sweet Potato Pie
(Vegan, Gluten-free, Non Dairy, Naturally sweetened)
Sweet Potato Pie Filling
1 1/2 cup cooked sweet potato
1/2 cup coconut milk
4 medjool dates
1/4 cup coconut flour
1 Tbsp. cornstarch
1 tsp. vanilla extract
1/4 tsp. sea salt
1/4 tsp cinnamon
1/2 tsp. pumpkin pie spice
(To prepare sweet potatoes) Preheat oven to 400 degrees F. Line a baking sheet with foil.
Wash sweet potatoes and place on baking sheet (I make a few at a time and keep extra in the fridge to use in recipes or to make babyfood). Bake until fork-tender.
Turn oven down to 350 degrees F. Peel the skins off the potatoes.
Blend or process all ingredients (for the filling) together until smooth.
Nut & Date Crust
8 medjool dates, pitted
1/4 cup dry toasted pecan pieces
1/4 cup almond meal
1/4 tsp. cinnamon
1/4 cup coconut flour
1 Tbsp. coconut milk
Pinch sea salt (I used ~ 1/16 tsp.)
Add all ingredients for the crust into a blender or processor and pulse until just combined. You may need to scrape the sides of the blender a few times.
Press ingredients into a 9 inch pie plate. If you want a thicker crust, consider doubling the recipe.
Scoop the filling into the crust.
Bake 30 minutes at 350 degrees F.
The pie is so good! You really should try it!
