I decided that today would be a perfect day (given the coconut flour giveaway) to make this coconut cake batter yogurt for breakfast — you can make some pretty amazing things with coconut flour!

I mixed my other favorite flour into Trader Joe’s tomato and roasted red pepper soup for lunch…

Snacks were a handful of almonds (recycled pic)…
…and air-popped popcorn…

To make this we grilled the veggies first, sliced them up and put them on the flat-bread w/ shredded cheese…

I love snacking on popcorn! Do you top it with anything? I spray mine with safflower oil and then sprinkle it with salt and nutritional yeast—so good!
This may sound weird but I top my popcorn w/ nutritional yeast, cinnamon and honey =)
