What I Ate Wednesday: My Favorite Yogurt

Hello!

I decided that today would be a perfect day (given the coconut flour giveaway) to make this coconut cake batter yogurt for breakfast — you can make some pretty amazing things with coconut flour!

I mixed my other favorite flour into Trader Joe’s tomato and roasted red pepper soup for lunch…

Amazing!

Snacks were a handful of almonds (recycled pic)…

…and air-popped popcorn…

Dinner

To make this we grilled the veggies first, sliced them up and put them on the flat-bread w/ shredded cheese…

Another day of delicious eats!

  11. i love grilled veggies and yogurt. i haven’t had yogurt in so long, now that i’m vegan. one of the things i miss so much!

    I love snacking on popcorn! Do you top it with anything? I spray mine with safflower oil and then sprinkle it with salt and nutritional yeast—so good!

  22. Ohhh that’s the soup you told me to try! I really need to get on that. It is officially cold/wintry in Chicago now. I think it is about time I embrace it and have myself a bowl of soup!
