What I Ate Wednesday: Pumpkin Cookie Dough

 

What is in zee dough?


Actually it’s really nothing new… just a “pumpkin makeover” of the cookie dough I posted a few weeks ago.

Before we talk cookie dough though I want to take a moment to mention that it’s WIAW… a link party where bloggers share some of their fabulous eats!  If you haven’t heard of WIAW make sure to hop over to Peas & Crayons to check out the details :)


 

So… back to the cookie dough that I ate yesterday …

IT.WAS.GOOD

ESPECIALLY.WITH.PEANUT.BUTTER

I used the same cookie dough recipe as before — just used pumpkin in place of the mashed banana and added pumpkin pie spice.

Pumpkin Cookie Dough

(vegan, gluten-free, non dairy, no added sugar)

1/4 cup pumpkin
1 tsp. peanut butter
2 Tbsp. coconut flour
1/4 tsp. vanilla extract
Stevia to taste (I used NuNaturals vanilla stevia, 7 drops)
Pumpkin pie spice from Trader Joe’s (to taste)
Optional –> top w/ more peanut butter


Moovin on to more of yummy eats…I finally tried spaghetti squash a couple of weeks ago and loved it!

So easy!  

As part of my lunch I topped spaghetti squash with Trader Joe’s organic marinara sauce. 


Snackage… there may be only two rice cake pieces pictured below but (trust me) many more pieces made the journey from the package, into the dip, and into ma mouth…

    The cookie dough looks awesome! My fave thing to make like that is a 1:1 mixture of peanut butter and vanilla sunwarrior protein powder…plus a little stevia. It makes peanut butter cookie dough and it’s so good I have a hard time stopping!

  6. Just when I thought cookie dough ball couldn’t get better, you add pumpkin. Can’t wait to try that out!

    Spaghetti squash is the best. I love to simply toss it with a bit of coconut oil, garam masla and raisins for an Indian-inspired dish.

    Now I know what I’m going to do with the little bit of pumpkin I have in my fridge. Do you think I could use almond flour instead of coconut flour?

    • I’m sure it would be tasty!! Not sure if it would have the same “cookie dough” texture though… coconut flour absorbs alot of moisture and gives it that cookie dough look!!

      • I just tried it with almond flour, and you’re right. It didn’t absorb it enough! It was more like pumpkin cookie dough pudding, but I loved it still! Going to get some coconut flour so I can try it again!

    tjs has pumpkin pie spice? Wish London had a TJs….but we do have spaghetti squash! I love it sweet and I bet ppspice would be great on it as well.
    I feel like every day I discover better nut butter + ___ combos :)

    WOAH this looks amazing! I am making some of my own (but with sweet potato, since I have tons of it cooked and on hand) as soon as possible–thanks for the fabulous idea! I was somewhat disappointed in TJ’s marinara sauce, but I might need to give it another chance.

  20. I think my fave meal this week was an eggplant sandwich I had at lunch yesterday. The restaurant makes its own cibatta bread (yum) and I requested that they not fry my eggplant and they didn’t (yay). That with pesto, goat cheese and arugula?! I was heavenly.

  23. Yummy cookie dough and PB. Must try! I made “Butternut Squash Mac and Cheese” that was delicious. Even my kids and hubby who were quite skeptical liked it :-)

    • You can try protein powder, almond flour, or peanut flour… it may result in more of a thick pudding texture than a cookie dough texture though…
      coconut flour is the best for the cookie dough texture =)
