How was your weekend?
Mine was pretty typical — baseball games, long walks, cleaning… and more cleaning.
Last week was pretty hectic so the relaxing weekend was welcome.
Despite last weeks craziness, I managed to get 3 posts in! I’m trying to stay positive about posting less… sometimes I get stressed because I would love to post everyday but I’ve come to realize that with 3 kids it’s just not possible to post everyday and give them the attention that they need and deserve.
So I look at it as getting 3 posts done as opposed to only posting 3 times a week!

Since the peanut flour giveaway is open until Friday I thought today would be a great day to share another peanut flour recipe — before I actually turn into peanut flour!
I call these “cookies” but they’re so healthy that it might be a crime to label them cookies.
There is no added butter, oil or sugar!!
High Protein Sweet Potato Cookies
(Vegan, gluten-free, no dairy, no added sugar)
This recipe makes 5 cookies
1/2 cup mashed sweet potato (equivalent to about 1 medium well-cooked sweet potato)
1/4 cup gluten-free old-fashioned oats
2 tbsp. vanilla almond milk
2 medjool dates, finely chopped
1/4 cup peanut flour (if you have no peanut flour try using coconut or oat flour)
1/4 tsp. cinnamon
1 tsp. vanilla extract
Stevia to taste (I used NuNaturals Vanilla Stevia, 7 drops)
Pinch of salt
Preheat oven to 400 degrees F. Line two baking sheets with foil and spray with non-stick cooking spray (one to bake sweet potatoes and one to bake cookies).
Wash the sweet potatoes — I make a few at a time and keep extra in the fridge to use in recipes or babyfood.
Bake sweet potatoes at 400 degrees F until tender (a fork should go right through the potato).
While the potatoes are baking mix the oats with the almond milk to soften them up a bit.
When the sweet potatoes are done, turn oven down to 350 degrees F.
In a bowl, combine all ingredients together — I just use my hands.
You will get about 5 cookie dough balls out of the mixture (unless you’re like me and you eat half the batter). You can easily double this recipe if you want more cookies — I just prefer to make smaller batches.
Put the cookie dough balls on the baking sheet and use a fork to gently press down the dough.
Bake at 350 degrees F for about 20 minutes.
Some optional ingredients that you can try in this recipe: chopped peanuts, peanut butter, chocolate chips, coconut flakes, coconut butter, etc.
I think chopped peanuts would have been fabulous — had I had any they would have gone into the mix!

Question –> What helps you relax when you’re stressed?
Before kids I would go on a long run. Now I go on long walks.
Back during my running days I would have called you crazy if you told me there would be a day when I would be comfortable with walking as my main form of exercise! Now — looking back — I was crazy thinking I had to run 3 miles or more each day to maintain a certain weight!
This also takes my stress away…

I only post 3 times a week, it works well for me as I can feel less rushed etc. As for running/walking I need to run, it’s a great stress reducer- what made you start walking? These are cookies even I can make. And 3 years old? Look at that stance.
Seriously! The stance is amazing isn’t it?!
I took running to the extreme and it became something I did just to control my weight…
For me walking is a huge stress reducer, I enjoy it, and it keeps my mind/body in balance…
I might start running again at some point but it would have to be for the right reasons if that makes sense!
I love that these cookies are gluten free and the ingredient list is so simple! I’ve been baking too many unhealthy cookies for Will and his friends lately, so maybe I should make these and not tell him anything is out of the norm
I made a very similar cookie dough ball over the weekend with about 1/4 cup blended banana (or mashed) and then added in enough old fashioned oats and peanut flour to get the right consistency. It made about 6-7 balls. So good!

I love to go for a long walk to get rid of excess stress! And perfect timing on this cookie recipe, as I just got a GIANT bag of free sweet potatoes and I’m going to have to get creative with them!

awwwww that picture of you son playing is ADORABLE. i can’t wait!!!! to be a mom!!! and the sweet potato peanut GF cookies sound delicious!!! btw, does your hubby or kids ever complain about how healthy the food is or do they love it just as much as you or do you cook differently for them?
My husband used to complain but now he’s very appreciative of the healthy cooking. He is sensitive to gluten and if he sticks to a gluten-free diet his psoriasis clears up and he doesn’t get migraines.
We all eat the same foods at meals. I don’t believe in cooking different foods for kids. I might serve it differently though. For example, if I make burritos then my older son will eat a whole burrito, my 3.year.old will eat a plate with beans, cheese, olives, peppers, avocados, and tomatoes, and my 1.year.old daughter will eat avocado chunks, beans, and cheese.

Absolutely love this recipe and can’t wait to try it out! My weekend was super busy with kids activities-football, soccer, and softball, plus playdates and family dinners. We did manage some family snuggle in bed time Sunday morning which was fabulous and definitely needed. It seems lately that our weekends have been busier than our weeks ( which are pretty busy too!). I’m looking forward to mid November when fall sports are over and we can have a little more time to relax. For me the best stress relief is a long hot bubble bath, or getting outside for a walk.

Posting schedules can get a bit stressful when there are so many other things going on. You just have to find something that works for you, but don’t worry about it.. your posts are great and no one minds less frequent posting. Just don’t quit posting your amazing recipes and it will be fine! :]
I like to do a short run, bake, and clean when I’m stressed and it always helps a little bit.
