What I Ate Wednesday: Forever Found

Good Morning!!  It’s What I Ate Wednesday!

Not only does WIAW inspire me to get creative in the kitchen, it’s also fun to check out what everyone else is eating — I get amazing new snackage and meal ideas from reading other WIAW posts.

These are my eats from yesterday of course.

Breakfast

Not sure what to call this but “crustless pumpkin pie” sounds like a good name… recipe coming ;)

Snack

One of my favorite snacks = “sweet potato cone” … even better, add some peanut or almond butter to the top.

Lunch

A big ol’ salad with quinoa, sun-dried tomatoes, baby tomatoes, sunflower seeds, chopped dates, and a mixture of greens.

Snack

Coconut Yogurt (greek yogurt + coconut flour) with trail mix

Dinner

Instead of posting a picture of my dinner from yesterday I thought it would be more important to talk about the dinner I went to last Thursday through our church in support of an organization called “Forever Found,” which exists to support the rescue and restoration of victims of child trafficking and prostitution.  Not an easy dinner to sit through… sometimes it feels easier to just ignore problems like these because you feel helpless.

But the reality is that 2 children per minute are trafficked worldwide for sexual exploitation (sickening)… there are no words to describe how horrific this is or to explain how something like this could happen.  The FBI even has a page dedicated to human trafficking and are working with local, state, and federal law enforcement agencies to stop it.

The only way to help these children is by spreading the word that this problem exists, prayer, and through the help of organizations like “Forever Found.”

Doesn’t it just blow your mind to know that human trafficking is tied with the illegal arms industry as the second largest criminal industry in the world (behind drug dealing)?!


When my husband and I arrived home after the Forever Found dinner we found this sitting on top of our car…

He says it was a leafbug… it looked like a little alien to me!

On a lighter note — since we’re discussing bugs — I’ve got a funny bug story for you.  I was reading a bug encyclopedia book to my son a few days ago — we get to the bedbug section and it says (no joke):

((Wait… instead of telling you what it says I’m posting a picture so you can read it for yourself…))

Whaaaat?!  Seriously!  I’m not sure that dramatic is the right word for their “method” of mating!

  2. but… you don’t eat the skin from the cone? That makes me sad :( that’s where all the good stuff is!
    bedbugs totally creep the heck out of me. We don’t have them here in Calgary, but when I went to visit a friend in Vancouver they were all over her apartment. I woke up halfway through the night and had sores everywhere and one big one was staring at me on the other side of my pillow. AH! omg the suppressed memories?!?

    • Yea that would pretty much freak me out too!!
      I would not want to wake up to bedbugs staring at me… no thank u!
      I do eat the skin… I scoop the potato out with a spoon and eat the skin as I go ;)

    Wow—the bed bug info is really creepy! I went to a conference in June in DC, and coincidentally after I got there, I heard that the hotel had a bed bug issue….I was so freaked out—the only other time I was around an outbreak was in boston. College students were in the habit of renting furnished (junky) apartments, and they had a huge problem. However…I’ve never seen a bed bug…and do not want to!

    Looks like a day of yummy eats!
    Thanks for sharing about Forever Found…it makes me just stop and think for a minute, and I’d love to find some way to help.

  4. Okay – that is definitely an alien on your car.Did you call the FBI? You need to send them that pic, ASAP.
    And bedbugs are disgusting. It’s one of the reasons I avoid hotels at all costs. The thought grosses me out. And now when I do have to stay in a hotel, I can lay there and not only worry about whether or not they are eating me alive, but that they are engaging in horribly violent behaviors with their female counterparts. Thanks for that, Lisa. ;)

    Can’t wait for the a new pumpkin recipe and without the crust even better…I just made a similar something last week when I was experimenting and it was almost like a custard! Bugs…gross!! :)

  8. One of the reasons I love checking out your blog is because of the creative ideas you post! Seriously, that sweet potato “cone” is such an awesome idea, I would never even think of eating it plain myself.

    In regards to the human trafficking, that is absolutely sickening. I’ve been reading a lot about it in the media as of late and it’s crazy how close to home the epidemic hits without us even knowing. :(

  12. That Forever Found place sounds interesting. I’m really interested in the causes and effects of Child Trafficing. Sounds like a great way to learn more. I’m glad I got my pumpkin fix in the US cause I can’t find it here!

  18. I’ve heard others mention almond butter with sweet potatoes, but have yet to try it myself. That salad looks fantastic. Bed bugs sort of freak me out – I don’t want to stay in hotels now LOL
