Vegan French Toast (gluten-free)

I thought I would be the only one loving this vegan french toast.

Turns out that my family loves it too!

French toast is one of many fantastic foods you can make with peanut flour.

 

 

Vegan French Toast

(gluten-free, no dairy, vegan)

Sliced bread (I used gluten-free bread from Trader Joe’s)
1 Tbsp. chia seeds
1/2 cup vanilla almond milk
2 Tbsp. peanut flour
1/4 tsp. cinnamon
1/2 tsp. vanilla

Toppings: Earth Balance buttery spread, peanut butter, blueberry chia seed jam, or honey!

 

Combine all ingredients (except bread of course) in a bowl or cup.  Let mixture sit for 15 minutes (thickens it up).

 

Warm a skillet on medium heat.  Spray with non-stick cooking spray or grease with non-hydrogenated spread.

Pour mixture into a wide/shallow bowl or plate.

Soak both sides of the bread.

Cook both sides of the bread.

It took longer to cook than french toast made with eggs.  I didn’t keep track of the time but you’ll want to cook each side until golden brown.

I can imagine so many amazing toppings on this french toast: pumpkin butter, mashed bananas, peanut flour thinned out with almond milk, chia seed jam

 

My kids ate theirs with peanut butter and honey.  What a great breakfast before school, right?!    You get a protein boost from the peanut flour and omega-3 fatty acids from the chia seeds.  My 1 year-old-daughter even loved the plain French toast.  Just make sure to break it into tiny pieces for little ones.

  1. This looks delicious, Lisa! I have a recipe for vegan french toast with a flax egg, but I’m going to have to try your version with chia seeds :)

    My favorite topping for french toast, actually– for ANYTHING, is almond butter. I don’t think that stuff ever gets old!

  2. French toast is one of my all time favorites. Sadly, neither my boys nor my husband shares my love of it. Maybe I should try this version… does the peanut flour + almond milk impart a different flavor than a trad’l egg batter? They might like this better!

  5. Great idea Lisa! I’ll have to try this out and see what my kids think :-) One of my favorite toppings for french toast is to sautee cut up peaches or nectarines in a little bit of coconut oil, and adda sprinkle of brown sugar and cinnamon. Very yummy!

  8. i love French toast the old fashioned way, topped with butter and maple syrup. I also love it stuffed with peanut butter and bananas. Okay…I don’t think there’s a way I don’t like it! :-)

    Oh, yum! I absolutely love french toast! Pumpkin butter would be really amazing on there, but peanut butter & honey sounds pretty darn good also.

  14. i LOVE the idea of pb frenchtoast! chia jam sounds heavenly with it. i always use jam for pancakes and frenchtoast! after your post on pb flour, i’ve been dying to get my hands on some! i can’t believe it has so much protein!

    That toast looks delicious! And it’s nutritional and simple. Although I have everything for the recipe but peanut flour. :( Someday though.

    My favorite French Toast topping is peanut butter with sliced bananas. It’s also my favorite for pancakes too. Although I do like real maple syrup, that is too much sweetness for me to have just that like I did when I was younger. Topping it with fresh fruit is much yummier!
