It’s time again for What.I.Ate.Wednesday! They weeks fly by don’t they?!

This really is “what I ate Tuesday” of course…
My morning started off a little hectic: dropped my son off at school at 8:10, doctor’s appointment at 8:20, was supposed to drop off my younger son at school at 8:45 but was running a little late.
Oh and the doctor’s appointment for me (annual physical deal) involved a fasting blood test for cholesterol — so not only was the morning hectic, I was running on empty. Me + no breakfast = no bueno
When I got home I inhaled a couple of these… similar to krispy treats… I’ll post the recipe later!
Then I had a monster date (or date monster…doesn’t it look like a little monster?) filled with peanut butter… I swear I heard it say…
“Nom”
The peanut butter date combo is so good… like eating candy.
Lunch was this krispy chia pudding =) Basically just chia pudding + brown rice crisps + peanut butter
Snack = baked chickpeas seasoned w/ rice vinegar, sesame soy ginger vinaigrette, and cayenne pepper.
Dinner was… tacos! We have tacos alot around here. Unfortunately the pics are still on my camera so I’ll have to post them later! Maybe next WIAW =)
I’m slowly but surely continuing to re-read Wooden: A Lifetime of Observations On and Off the Court, one of my favorite books that I talked about on “A Few of My Favorite Things” post.
Last time I shared the list of 7 things to do, the first one being “be true to yourself.”
Wooden’s words on being true to yourself:
If we are not true to ourselves, we cannot be true to others — our wife or husband, our family, our profession, and colleagues.
To me this means to accept yourself fully for who you are without apology, which is something I continue to work on.
I love this quote by Dr. Seuss:
Be who you are and say what you feel, because those who mind don’t matter, and those who matter don’t mind.

Call me crazy, but I’ve NEVER tried chia seed pudding! I actually just made a pudding-like texture to put in my oats this morning, but didn’t even think to eat them plain. Do you just combine them with water?

Nope… I combine the chia seeds with almond milk to give it a creamier texture. Remember to stir well or the seeds will clump together, let sit for a minimum of 15-20 minutes and then stir again. Then you have “magic” chia seed pudding =)
OK wow that date looks good. As for being true to yourself. I am not someone who doesn’t “say what I feel” but second guessing can be a problem. How did Dr Seuss get so smart?
Yes the PB + date is definitely a “WOW” combo. That brain of Dr. Suess is amazing!
Everything you got pics of looks awesome! I can’t wait for that recipe. Isn’t chia pudding awesome? I always mash up a piece of fruit in mine (usually with cinnamon) and heat it up – it’s like cobbler.
Chia pudding is awesome, especially w/ mashed fruit and some kind of crunch (nuts, rice crisps)!
Oh man everything looks fantastic…I wish I could pull up a chair at your table. I think the date and pb combo is my favorite (just due to it’s mere simplicity)…however I anxiously await the recipe for the krispy treats.
Oh my gosh, I love this post! I’d totally forgotten how much I love coconut butter squished into a date… and baked chickpeas. Amazing how quickly we forget our favorites. As always, looks like a great selection of eats. Can’t wait for the krispy treats (hehe that rhymed)
I think being true to yourself is a growing and learning process…it takes time! I think it is also impacted by our situation..our job, those people who we are surrounded by, etc. Funny, I shared a similar message today on the blog..great minds think alike!
Date monsters…YUM…what a perfect combination of flavors, right! Can’t wait for the new rice crispy recipe!

Love the simplicity of a date w/ peanut butter. Brilliant! And your roasted chickpeas sound yummy too! I think I’m pretty true to myself, but there’s always room for improvement! Love Dr. Seuss’ books and illustrations. I sat next to him at Starlight Theatre when I was little…He sent me a signed book with a drawing of an “extra truffala tree” just for me. Good memories

I have to have a fasting blood test for something on friday at 10:00am! As someone who usually wakes at 630, this is horrible!! I don’t know if I’m going to make it….
I love dates and nut butter though, I’ll be dreaming of them for sure. Those and roasted chickpeas. How crispy!
I am not entirely sure of why this is, but I have never had the Date/PB Combo! I know.. total crap! haha I shall be tasting this soon

I think the better question is, “Who hasn’t struggled with being true to themselves?” Such a universal issue that it’s nice to see someone touch on, even for a moment.
And dates and peanut butter? I have both in my pantry and this is now on the top of my list of things to try!

I just made roasted/baked chickpeas this past weekend. It is a snack that I had forgotten about for awhile but once I make the can they are gone so quickly!
I feel like I’m the only person that hasn’t tried the date + nut butter combo! I need to try this for a pre workout snack!
