Raw Cookie Dough Chia Pudding

Yesterday we spent all day at Legoland in San Diego for my son’s 6th birthday.  We celebrated my 3-year-old’s birthday too since his birthday falls on December 27th and who feels like partying on December 27th?  I planned on sharing pictures but the camera is in the car — aaaaand considering we are staying in a hotel (thank u Priceline) I’m not about to go and get it.

This morning I want to share one of my favorite breakfasts with you!


This is PB Coconut Cookie Dough Oats turned raw.  Her name is Cookie Dough Chia Pudding.

 

This fabulous pudding is not only raw, it’s gluten-free and vegan.



Makes 1-2 servings

Ingredients

1/4 cup chia seeds (use ground flax-seeds if you don’t have chia)
1 cup unsweetened vanilla almond milk
cinnamon
1 tbsp. flour + 1 tbsp. flour (use powder if you don’t have coconut flour)
1/4 tsp. vanilla extract
1/8 cup unsweetened applesauce or mashed banana
optional 2 tsp. sweetener (agave, honey) (stevia = no calorie sweetener)
1 tbsp. nut butter (I used peanut butter)


Simply combine the chia seeds and almond milk in a medium bowl and let sit for 20 minutes or in your fridge overnight.  Give it a good stir about 10 minutes into the gelling process.  Then stir in the cinnamon, 1 tbsp. coconut flour, vanilla, and applesauce in a medium bowl.  Adding the sweetener is optional.

Mix in the additional 1 tbsp. of coconut flour (or protein powder).  It will get clumpy like cookie dough.


Top with 1 tbsp. peanut butter.



Turn this cookie dough breakfast dessertish by adding chocolate chips!

If you don’t have any coconut flour or protein powder just stick to raw chia pudding.  No chia… that’s ok too… use flax.   No flax… use oats.  It’s all good.

  2. What a great idea! Is it wrong that I’m already looking forward to breakfast now?! I love that you can add protein powder… but I love my coconut flours too. I’ll have to try it both ways and report back. :)
