I’m absolutely in love with Earth Balance products. Why?? They’re 100% natural, rich in omega 3′s, no trans fats, no GMO’s, and free of artificial ingredients of any kind. That’s important to me because I care about what goes into my body (duh) and about what my kids are eating. I always have their whipped organic earth balance buttery spread in my fridge and use it for a variety of purposes – as a spread, to saute, and to cook. I also use it (melted) to flavor popcorn.
That’s why I am super excited to announce that Earth Balance has two new fabulous products.
Organic Coconut Spread (vegan, gluten-free, no-GMO’s) – This rich, smooth, and creamy spread can be used for baking, sautéing, frying, spreading, and topping.

Annnnd Earth Balance Mindful Mayo (vegan, gluten-free, no cholesterol, no-GMO’s) – A savory, creamy alternative to mayonnaise. You can use it in salads (potato, tuna, macaroni, pasta, chicken), as a dressing, or as a sandwich spread.
Both of these products are now available at Whole Foods Markets.

First I’ll give you 2 yummy recipes to make with the coconut spread.
Gluten-Free Vegan Carrot Coconut Cake (the husband loved this one)!
Ingredients
3/4 c Bob’s Red Mill gluten-free all-purpose baking flour
1/3 cup coconut flour
1 tsp. gluten-free baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
2 tbsp. chia seeds soaked in 1/3 cup almond milk
1/2 cup almond milk
1/8 cup Earth Balance coconut spread (use peanut or almond butter if you don’t have coconut spread)
1/4 cup mashed pumpkin (you can also use applesauce or mashed banana)
1/8 cup honey
1/3 cup brown sugar (*no added sugar option –> 1/3 cup NuNaturals stevia baking blend)
1 tsp. vanilla extract
1 cup carrots, grated
TIP —> When chia seeds are mixed with liquid, they form a thick gel, and you can use them to replace up to 2 eggs in recipes (for each egg use 1 tbsp. of chia seeds + 3 tbsp. liquid).
For this recipe combine 2 tbsp. of chia seeds + 1/3 cup of almond milk and let soak for 20 minutes. Stir the chia seeds about 10 minutes into the gelling process.
Preheat oven to 350 degrees. Lightly grease a 9 x 3 x 5 inch baking pan.
Once the chia seeds turn to gel add the rest of the wet ingredients and beat on medium speed until combined: chia seed gel, almond milk, coconut spread, pumpkin, honey, brown sugar, vanilla, and shredded carrots.
In a separate bowl, whisk together the dry ingredients: all-purpose baking flour, coconut flour, baking powder, baking soda, and cinnamon.
Add the dry ingredients into the wet ingredients. Mix until just combined.
Pour the cake batter into the pan evenly. Bake for approximately 25-30 minutes, until a toothpick comes out clean.
Gluten-free Vegan Coconut Chia Pancakes
Ingredients
1 tbsp. chia seeds + 3 tbsp. almond milk (this is to replace the eggs)
1 tbsp. apple cider vinegar
1 1/4 cup almond milk
2 tablespoons banana puree (applesauce or pumpkin will work)
1 tbsp. Earth Balance coconut spread
2 tsp. sweetener (honey, agave, brown rice syrup) (use 1 packet of stevia for a 0 calorie sweetener)
1 cup gluten-free baking flour (I used Bob’s Red Mill all-purpose baking flour)
1/4 cup coconut flour
2 teaspoons baking powder
1/4 tsp salt
1/2 tsp cinnamon
In a medium bowl, mix chia seeds with 3 tbsp. of almond milk and apple cider vinegar. Let sit for about 15 minutes. Add remaining wet ingredients: almond milk, banana, coconut spread, and sweetener (you may need more depending on how sweet you like the batter). Blend well.
In a separate bowl, combine dry ingredients: all-purpose flour, coconut flour, baking powder, salt, cinnamon.
Gently mix wet into dry ingredients being careful not to overmix the batter. Lightly rub oil on a skillet (I usually use a paper towel) or spray skillet with a Misto. Cook pancakes over medium heat.

Hello Lisa, I found your site through links in other food blogs. I’ve enjoyed some of your ideas. I LOVE Earth Balance! I get the soy-free version, as I have to eat gluten-free, dairy-free, soy-free, corn-free, sugar-free, caffeine-free and no artificial ANYTHING! I am a 4-year stage IV ovarian cancer survivor/patient who did NOT do chemo or radiation. Instead, I have relied on healing from Jesus Christ. He also led me to an alternative doctor who radically changed the way I eat. I had lots of food intolerances and just did not know it! I really apapreciate food bloggers like you and Elana and Amy and Carrie. I wish I had found you guys four years ago– my life would have been sooooo much easier. But, at least I found you now! I do already subscribe to your site by email… Thanks!

I have tried the Earth Balance original spread and it’s great! I love to put in on toast and anything else calling for butter. I usually use Veganaise for my mayo substitute, but would definitely switch over if this one is better.
