Grilled Veggie Bean Burgers

Three things that come to my mind when I think about warm summer evenings are baseball, beer & BBQ’s.  We don’t have many plans this summer but why make a ton of plans when you can spend the evenings grilling, watching baseball games, and enjoying some a cold beers from TJ’s.

To kick off the summer and “The Recipe ReDux” I decided to turn my kitchen into a laboratory and make grilled veggie bean burgers.  I didn’t anticipate how much time this would take me or the mess that I would create in my kitchen — multiple times — but I’m glad I took on this challenge because now I can whip up veggie bean patties like no other.

Recipe ReDux

Makes 5 veggie patties

Ingredients

3 cloves garlic minced
1/2 cup onion, finely chopped
1/2 cup celery, finely chopped
1/2 cup carrots, finely chopped
1/2 tsp. crushed red pepper
1/2 tsp. salt
1 can garbanzo beans, rinsed, drained
1 cup quick cook oats
1 egg
2/3 cup shredded low-fat cheese (I used a light Sharp Celtic cheddar cheese from Trader Joe’)
oil for rubbing on patties & grill

 

Sautee garlic, onions, celery, carrots, crushed pepper, salt until vegetables are lightly browned.


Mash the beans in a large bowl.  I did this step with my hands since I don’t have a food processor.

Add all ingredients to the bean mixture (including sautéed mixture, oats, egg, cheese) and mix until well combined.  I also did this by hand by mashing and squishing all ingredients together.  Messy but FUN.

Roll ingredients into a big ball.

 

Separate into 5 smaller balls.

 

 

Form balls into patties and rub a coating of oil on each side.  Spray the grill with non-cooking spray.  You MUST do both steps to prevent patties from sticking to the grill.  Fire up the grill and BBQ the patties over medium heat.  About 8-10 minutes on each side.

 

 

Serve on a whole wheat bun with lettuce, tomatoes and avocado slices.

 

And pineapple salsa… YUM!!

 

If you like veggie burgers then try doubling this recipe and keep the extra patties in your freezer.  You can go bunless and serve these patties over a bed of lettuce or cut them in slices and roll them up in a tortilla for a yummy summertime wrap.

  8. Love these Lisa! I’m a huge fan of homemade veggie burgers, as you know, and I love ones that are made with chickpeas. I also love the addition of the cheese for a little extra flavor! Trying to think what I can use in place of the celery – I don’t have any at the moment. Maybe an orange or red pepper??

  12. Totally interested in making these. I’m not sure how I feel about the soy protein in many of the frozen veggie burger varieties. This would be a much better choice (and I bet much more tasty, too!)

  14. I Haven’t moved up to grilling homemade veggie burgers yet as I was thinking they would probably fall apart but I might give it a go next time! Great recipe! And BBQing is probably my favourite thing about summer! :)
