Peanut Butter Date Krispy Treats (gluten-free + vegan)

These are similar to the cocoa chia crunch bars I posted last week, only CRUNCHIER!

They make perfect “between meal” snacks.

 

 

Crunch, crunch…

 

 

They take just minutes to make.

Makes 5 small bars

Ingredients

8 dates, pitted
1 tbsp. peanut butter
1 tbsp. cocoa powder, unsweetened
1/4 tsp. vanilla extract
1 tsp. chia seeds
1/4 tsp. cinnamon
2 tbsp. quick cooking oats
1 cup brown rice crisp cereal

 

In a medium bowl, combine the dates, peanut butter, cocoa powder, vanilla extract, chia seeds, cinnamon, and oats.  Don’t add the brown rice crisp cereal just yet.  I make this recipe without any processors or blenders by simply mixing the ingredients by hand.  Mash everything into a ball.  It gets a little messy but it’s fun, especially for the kids.  It’s like kneading dough.  Just keep pressing and rolling the ingredients until combined.  Then add the brown rice crisps to the dough.  It takes some work to press all the crisps into the dough but think of it as exercise  ;-D

 

 

You can use plastic wrap or parchment paper if you want a perfectly formed bar.  Press the dough into a rectangle.  Slice into 5 equal portions.

There are so many ways you can customize these krispy treats.  Just start with a base of dates, cocoa powder, nut butter and add any of your favorite ingredients or flavor extracts: walnuts, pistachios, sesame seeds, coconut flakes, cranberries, raisins, oats, chocolate chips, mint extract, etc.  Then add the brown rice crisp cereal.

Now for a question –>  Why is it that normally it’s a p.i.t.a to wake my kids up in the morning for school but on the FIRST day of summer break they’re up at 6 AM.  That’s including the baby.  Don’t they know that these are MY quiet hours to get stuff done?  Haha!  Yea right.  My baby is looking at me right now with a “feed me NOW face!”

  3. I love these Lisa!!! I can just imagine the crunchy texture and for some reason they remind me of “Watchamacalits” – remember that candy bar?? I haven’t had one of those in YEARS, but I used to love the texture of them. I think I’ll try these! :)

  4. Sounds yummy and we love dates in our house. Of course they wake up early when you don’t expect them to; on weekends; or when you are anticipating a quite morning.

  6. These look delicious. Will definitely have to try and make them soon! My kids are in school until the end of this week. I definitely am more of a morning person as far as getting things done. As my kids have gotten older, they do tend to sleep in more which is nice. I’m sure we’ll be on our summer routine soon, with later bedtimes, and ( hopefully! ) later wake up time too.

    I just tried to make these and I failed miserably. Haha. I just could NOT get the brown rice puffs to mix in with the dough enough to make it all stick together. So, my questions: Did you use Medjool dates or regular dates? I know Medjools are a big bigger so I wonder if I didn’t have quite enough “sticky” to hold it all together. and 2) I used arrowhead mills brown rice puff cereal – is that the same kind of cereal you used? The taste was wonderful – I ended up adding more peanut butter and a little maple syrup and formed them into balls. But I really want these crunchy pieces of heaven that you made!! :)

    • I did use medjool dates but I think I might know what the problem is. I used brown rice crisp cereal. They look like rice krispies. I think that the puffs might be bigger so if you use those you would need more dates to hold them together. Let me know though :)
