Could I make that title any longer? Yesterday I went crazy with quinoa. I was inspired by some of the amazing food bloggers using quinoa in their recipes!
I made a huge batch of coconut quinoa. I got the coconut quinoa idea from the Inspired RD only I doubled the recipe and used 2 cups of quinoa + 2 cups coconut milk + 2 cups of water. It’s super easy!
First rinse the quinoa seeds in warm water. This step is important to remove any of the residue, called saponin, that may still coat the quinoa seeds. To cook the quinoa, use ratio of 1 cup quinoa to two cups of liquid.
To make a large batch like I did you’ll need a large pot. Bring 2 cups of coconut milk, 2 cups of water, and 2 cups of quinoa to a boil, stir, cover and reduce to simmer for about 10 minutes.
When the grain is done you’ll see a ring around the outside edge of the seed.
Movin on to the smoothie recipe. The idea for this smoothie was adapted from the fabulous Living Lindsay and her Strawberry Banana Quinoa Yogurt recipe. She is running a 5 K today! Go Lindsay!
You can get all of these ingredients from Trader Joe’s… except the chia seeds. You can get chia seeds at Lassen’s or Whole Foods. I didn’t use both chunks of tofu in the picture below… just one (3 oz.). And I forgot to put the almond milk in there
I use Trader’s Joe’s almond milk.
Ingredients
3 oz. organic tofu (comes out to 1/6 of the block of Trader Joe’s organic tofu)
1/2 cup coconut quinoa
1 tbsp. chia seeds
1 cup vanilla or chocolate almond milk
1/2 cup frozen mango
Ideally you can throw all of the ingredients into YOUR high-tec blender like the Vitamix or Blendtec. However, if your like me and don’t have one (pity party… whaaaa) then use a blender or food processor.
This smoothie comes out really thick which I like! If you like thinner smoothies add more almond or coconut milk.

Great recipe. I would never think to add quinoa to a smoothie. Love the mason jar touch as well. I make black rice and add a splash of coconut milk and cardamom for a delicious breakfast. Yum.
